William Eng M.D. & Family Scholarship for the Most Improved (Silver Dragon Restaurant)

Our family scholarship fund is intended to honor our parents, Sai Foo and Man la (Sandy) Ng who founded and operated the Silver Dragon Restaurant for 22 years on 515 Washington St. in Brainerd, MN. Although my father did not attend school past 3rd grade, he learned cooking while washing dishes in Montreal to provide for his family which consisted of 3 sons, William, Raymond, Wai leong (Lance) and a daughter, Kathy. Although higher education was never mandated in our family, we instinctively knew the importance of self-improvement. William (BHS ‘83) holds a BA from St Cloud State University, a MS from University of Tennessee, Knoxville, and MD from University of Tennessee Memphis. Raymond (BHS GED ‘84) holds a BS from St Cloud State University, an MBA from St Thomas University.

Lance (BHS ‘88) and Kathy (BHS ‘93) holds a BS from University of Minnesota. Our education was made possible from our parent’s earnings from their restaurant, so we would also like to thank our many customers throughout the years who came to enjoy our Chinese food. Today, our father rests in the local Evergreen cemetery, while our mother lives in Minneapolis. Brainerd has been an important part of our lives, and our family holds an annual memorial service for our father.
